ABOUT

We have made our home in Niseko for 27 years. UISGE opened in the autumn of 2021, built on everything I was given the chance to learn in Japanese and Western kitchens.

Uisge is an old word for the turning of water — rain, rivers, the sea, the water that circles through the air. People who lived close to nature held it as the source of life. We would like to keep that feeling here, with gratitude.

It is a small room. From the counter, and from the tables as well, you can watch the chef cook at the teppan while you eat.

Mt. Yotei is out the window, and on a clear night the sky fills with stars. Along with the colours on the plate, we hope you feel the season here in Niseko.

Course meals cooked on the teppan, made mainly with Hokkaido ingredients and fresh vegetables from around Niseko.

Hokkaido wagyu, abalone, foie gras, lobster. The menu changes with the season.

Closed Wednesday and Thursday Japanese and English are both fine.

Closed 1 September — 8 October 2026 while we cook at an outside event. We reopen on 9 October.

ACCESS

Two hours by car from Sapporo, fifteen minutes from Niseko Hirafu, two and a half hours from New Chitose Airport.

In winter, please check road conditions before you set out, and take care on the way.

Can we come without a reservation?

We are by reservation only.

Can you accommodate allergies?

Please tell us when you book, and we will accommodate what we can.

Is there parking?

We have space for three cars. If you are able to share a ride, it helps us a great deal.

Do you serve lunch?

Yes, from October 9 to November 30 only. Lunch is served in two seatings, at 12:00 and 13:00, by reservation only.

Can we smoke?

The restaurant is non-smoking throughout.
